The royal wedding of Prince Harry and Meghan Markle is just a day away and we can’t wait to see the ceremony. While there has been a constant sense of excitement and speculations about the wedding since day one of its announcements. Adding to the excitement, everyone is eager to know how the royal wedding cake will look like. In March, Kensington Palace announced that pastry chef Claire Ptak of London’s Violet Cakes was chosen to bake Harry and Meghan’s wedding cake. While we certainly cannot taste the exquisite cake (how we wish), but here’s a behind-the-scenes look at creating the wedding cake.

The royal family has granted the public a sneak peek of the wedding cake. British weddings typically serve a fruitcake. But Prince Harry and Meghan have broken with the tradition by selecting a lemon elderflower cake covered with buttercream and decorated with fresh flowers. It is meant to evoke the bright flavours of Spring.

Royal Cake Making in the Process

Claire has been working on the spring-inspired creation in Buckingham Palace kitchen over the past five days. She is being assisted by a team of six other bakers. The cake is being made from Amalfi lemons, elderflower cordial and organic eggs.

Claire Describes the Cake

She explains in the video that the inside consists of layered lemon sponge that’s been drizzled with an elderflower syrup and sandwiched using buttercream and lemon curd. The outside will be decorated using a white buttercream made from elderflower Swiss meringue. Sounds yum!

Claire said, “The elderflower is so quintessentially British to me as a Californian. It’s a kind of ethereal, floral flavour which I think is very special especially for a wedding.” According to the baker, the royal couple liked the originality and creativity behind the cake’s spring design praising its seasonality and freshness. “The buttercream is sweet, and the lemon curd is very tart, so you get a very lovely thing happening when you take a bite, which is to get all of these flavours and sensations perfectly balanced,” Claire explained.

The final appearance of the cake and its display will be kept secret until the day of the nuptials. The cake will be served at the post-ceremony reception in St George’s Hall and will be decorated with a variety of flowers including some of Markle’s personal favourites in shades of white and cream. The cake installation will be put together on the morning of the wedding with the flowers being added once the cake’s been carefully transported to Windsor Castle.
