1. Pindi Channe
Chickpeas are cooked in various masalas to give a burst of flavours in this authentic Punjabi recipe. Add 3/4th teaspoon baking powder to two cups kabuli channa and soak for 3-4 hours. Then cook the channe in water with tea leaves tied in a small cloth and a tablespoon of salt. Remove the tea leaves and drain the excess water. Then add a tablespoon of cumin and coriander powder, black pepper powder and garam masala powder each to the channa and mix well. Add oil in a pan, add ginger and cook until slightly brown. Then add green chillies and the channa mixture. If you want, you can add potatoes and cook the mixture until well-mixed and slightly fried. Garnish with lemon quarters and serve. 2. Sarson Da Saag
Heart-warming saag coupled with makke ki roti with a dollop of butter is a combination that is loved by one and all. Chop a bunch of spinach and mustard leaves each, wash and drain. Heat oil in a pressure cooker, add the greens, the green chillies and stir. Then add half teaspoon grated ginger and chopped garlic each. Add salt and water and pressure cook for two whistles. Allow the mixture to cool and then blend it to a coarse paste. Now add ghee in a pan, add in some onions and sauté till brown. Then add the green paste, half teaspoon garam masala and one teaspoon maize flour. Squeeze in lemon juice and cook till the oil starts to separate. 3. Corn Palak Ki Tikki
Blanch spinach in water and chop. Then blanch corn in milk, grind, and keep aside. Mix in lemon juice and chaat masala in the ground corn. Then mix a cup of boiled potato, a cup of grated paneer and blanched spinach with the corn. Add a teaspoon of black pepper powder, garam masala powder, cumin powder and kasori methi each to the mixture. Mix in salt, grated ginger, corn flour and coriander leaves to make the tikki paste. 4. Gur Ki Roti
Jaggery is a quintessential part of Punjabi cooking, especially when it comes to festivities and celebrations. To prepare this deliciously sweet roti, dissolve three cups gur in half cup milk in low heat and then cool. To make the dough, mix a pinch of baking soda and salt in the whole wheat flour. Add ghee into the mixture and knead to form a firm dough. You can add some milk to get the right consistency and roll the dough into 1/4 inch thick rounds. Flatten the dough and cook over low heat smearing ghee around it.
5. Murmura Laddoo
These crispy laddoos made with puffed rice and molten jaggery can be perfect titbits to satisfy those in-between hunger pangs. Add jagerry and water in a pan and dissolve the jaggery in low heat. Once the jaggery dissolves, cook the mixture over full flame till you reach a thread-like consistency. Mix in the murmure into the mixture, take it off the heat and let it cool for a while. Moistening your hands, make round balls, allow it to cool and serve.
