Bhuna Kaleji is a flavourful dish and an Eid specialty in the state of Uttar Pradesh. The liver of the sacrificed goat is cooked with savoury spices, chopped onion, ginger, garlic and green chillies in a way that it melts in the mouth. Usually eaten as appetisers, it tastes best with rumali roti, a soft and thin Indian flatbread.

Mutton Korma
