Eid-ul-Fitr 2018 Special Recipes: Mouth-Watering Seviyan Preparations to Wish Eid Mubarak This Year

The holy month of Ramadan is coming to an end and Muslims around the world are gearing up for Eid-ul-Fitr 2018. Eid-ul-Fitr falls on the first day of the month of Shawwal implying the breaking of the fasting time frame, which goes on for a month. This year, the Muslim population worldwide will begin to celebrate Eid from June 14 and will end on the evening of June 15. Eid in India is also called the ‘Sweet Festival’ with sweet food items taking centre stage on the auspicious day. Popular desserts are primarily prepared from seviyan (vermicelli). Below we share with you mouth-watering delicacies prepared using seviyan.
Sweet Seviyan Recipes to Enjoy This Eid
1 Lachha Seviyan
Ingredients:
1 Seviyan – 100 gms (or amount depends on how much you want)
2 Boiled Milk – 1 litre
3 Cashew Nuts, Almonds, Raisins – 25 gms
4 Condensed Milk – 4 to 5 tbsp
5 Sugar – ½ cup (or as per your taste)
6 Saffron – A pinch
7 Water – 1 cup
Method:
- Take a kadai or pan and add ghee to fry cashew, raisins and seviyan till they are golden brown. Keep them aside.
- In the same pan, heat the milk and add the water as well. Let it boil on low flame till milk gets dense. It should become thicker. Stir occasionally so that milk doesn’t stick to the bottom.
- Add the sugar and condensed milk. Cook for five to 10 minutes, stirring continuously.
- Add the saffron, fried cashew, raisins and seviyan and cook for another two to three minutes.
- Garnish with sliced almonds and serve hot.
2 Quemaami Seviyan
Ingredients:
1 Seviyan – 250 gms
2 Sugar – 500 gms
3 Cloves – 6
4 Green Cardamom – 6
5 Bay Leaves – 2
6 Ghee – 4 tbsp
7 Dry Fruits – any
Method:
- In a pan, fry vermicelli or seviyan in ghee.
- Make sugar syrup by boiling sugar and water. Strain the syrup once it’s done.
- In the same pan, add ghee and fry cloves, cardamoms and bay leaves. Add dry fruits of your choice and let it cook for two to three minutes.
- Once you start getting the aroma, add in the sugar syrup and keep stirring.
- Take it off the flame and mix sevaiyan properly. Garnish with grated nuts and dry fruits. Serve hot.
3 Sheer Khurma
Ingredients:
1 Milk – 5 cups
2 Vermicelli (roasted) – 50 gms
3 Coconut (grated) – 50 gms
4 Sugar – ½ cup
5 Green Cardamom – 2
6 Dates (chopped) – 2 tbsp
7 Raisins – 10 to 12
8 Almonds (blanched & chopped) – ¼ cup
9 Khus (Vetiver) – ½ tsp
Method:
- In a wide pan, simmer the milk till it thickens to the consistency of cream.
- Add the vermicelli, coconut, sugar, cardamom, dates and half of the raisins and almonds.
- Bring to boil and then simmer for about five minutes.
- Add the khus and garnish with the remaining almonds and raisins.
- Serve hot or cold.
